Surgical. The 'room' trays don't have 2 wheels. They have 4, and are usually a wood-fake laminate.
These are usually used by doctors and dentists for surgeries/procedures. No trip hazard, and won't roll away (only two wheels). Surgical stainless, easy to clean. Trays lift off, but can't slide or fall off.

the only thing I think I would add to them is some handle bar tape or foam rubber, just in the area where they would tend to rub up against the bumper! Just a thought!

next best thing....stick some neodymium magnets several inches apart in a grid pattern on the underside....automatic secure screw/bolt organization system.
I'm officially jealous though, those are just about the most awesome thing you could have when working on a car....excellent stability, endless placement potential, easy cleaning, and of course, the general cool factor of them just being official surgical grade stainless.

BTW, for those of you trying to figure how to organize the small fasteners on the tray, it would be just as easy to use those small magnetic parts trays from Harbor Freight ($0.99 ea.) and seperate the fasteners that way. They wouldn't stick to the SS trays, but then they really wouldn't have to.
