Is it a bad thing that my '05 SE's UIM date code reads 09/01/2004?

Not at all. That sounds about right for an 05. What is the build date on the door?

September of '04. I want replace it all this fall, but I was reading up on the fuel pressure recall/UIM explosions. Haha now I'm paranoid.

You can either replace the UIM or you can drill, tap, and plug the coolant holes in the LIM. Doing so eliminates the coolant loop traveling through the throttle body, and therefore makes the UIM EGR passage harmless.
