So is it major surgery to swap the LeSabre final drive from 2.81 (IIRC) to 3.05?

No, I am looking at a potential vehicle. It appears the only last-gen LeSabre that had 3.05 are those equipped with Gran Touring package. Those are pretty rare.
From what I've read, the 3.05 makes a significant difference in acceleration.

Yeah more than most of the time the 3.05 was part of the Grand Touring package, and it does make a difference..
The diff can be changed, but you may need a different passenger side Axle, I am not 100%, not sure if the axles are the same for both 2.85 and 3.05
You would also need your PCM reflashed for this...
