This can be done at ambient temperature, or by heating water or cooling water, immersing the sensor, and checking it. Use another thermometer to insure proper water temperature. Generally, if it reads correctly at a single known value, the sensor is good:

From this chart, it's easy to see that these sensors will read colder if the sensor is disconnected (higher resistance). Corrosion can have the same effect.
