Coolant Temp with 180 Stat

Just changed the stock 195 stat to a 180, yet the car still seems to be running at the same temp.
Gauge needle is just a tiny fraction past the 200 degree mark. Radiator is full, and overflow tank is also to Full Hot line.
Shouldn't the gauge now be at least 1 full mark under the 200?
What could be my problem? Thanks!!
