Temp running high

Has anyone else had issues with coolant temps spiking high after running highway speeds for a few hours? The car doesn't overheat but it jumps up to the 220-230 area (mark before the red zone ) and hangs there an uncomfortable amount of time. Level doesn't appear to be low when checked cold.

I'm running a 180 single 1/8 hole drilled t-stat and while running along temp never exceeds 200

Is something amiss or is my t-stat not allowing enough cooling time in the radiator?

Please chime in since I just started a 5 day road trip and I don't want a failure if I can prevent it. Seems crazy I should have this issue with outside temps in the 30s or colder

I'm not the most knowledgeable member here, but I figured I'd give my input. The most logical things I can think of if you're sure the t-stat is good is a blockage of some sort in the system, air pockets in the coolant, or bad radiator fans. Maybe you can stop for a cooling system flush? Otherwise you could try running without the engine cover to allow more air flow. Maybe I sound stupid, I don't know. But this is just my two cents.
