i understand the process to replacing the stepper motors,
but how would i install these led's

You wouldn't. Those are for a completely different cluster where the bulbs are installed in sockets that twist into the back of the housing. The lamps on the Bonneville cluster are very small and are soldered to the printed circuit board. Changing them to LED (although not impossible), is not an overly easy task.
